I have had a great Easter weekend. Firstup on Thursday went to South Melbourne market to stock up on supplies and then a wonderful walk in the Autumn sunshine.
Friday was for reading and launching my Etsy store. Yes finally taken the plunge. Check out my shop here
Saturday- more walking, pizza and then onto the Carlton and Essendon match at the MCG....unfortunately we lost!!
Sunday - Easter lunch with family at my place. Made this delicious Almond and Pear tart.
90g softened butter
90g brown sugar
2 eggs
120g almond meal
40g plain flour
1/4t baking powder
2finely grated lemon rind
2 packham pears, peeled,cored and quartered
90g brown sugar,extra
raw sugar for sprinkling
double cream to serve
Preheat oven to 160C. Place the butter and sugar in the bowl of a food processor and process until just combined. Add the eggs, almond meal, baking powder and lemon rind and process until just combined.
Spoon the mixture into a lightly greased loose bottom rectangular tart tin.
Press the pears into the tart mixture and bake for 35-40 minutes or until cooked when tested with a skewer. Sprinkle with raw sugar and allow to cool in tin, Serve with double cream.
