I made this fabulous flourless orange cake as a birthday cake for my sister. She is a coeliac so I am always looking for great recipes so that she feels included in family parties.
It is deliciously moist and the topping turns it into something special that is more of a dessert.
2 medium oranges
3 eggs
250g sugar
1t baking powder
265g ground almonds
1. Srub oranges and put them whole into a saucepan with enough water to cover add lid. simmer for 1-2 hours or until completly tender. You may way want to change the water upto 3 times to ensure the skins are not bitter.
2.Grease 20cm tin and dust with almond meal. Cut out round of parchment paper for base of tin. Preheat oven to 180C.
3. Puree the ornage flesh and peel in food processor. Beat the eggs and sugar in mixer until pale, light and soft, approx 2 minutes. Combine baking powder and ground almonds and fold gently into egg mixture. Fold in orange puree.
4.Bake for 1 hour
Optional Topping (or just dust with pure icing sugar)
50g caster sugar
250g mascarpone
grated rind and juice of 1 lemon
Mix the mascarpone and sugar, juice and rind and spread over the cake.
